I have a 2005 Specialized Roubaix, it has a lot of mile and im thinking of getting all new components.?

Its has Shimano 105 components. Question is. Are the Shimano Ultegra or Sram Apex groups compatible and which was is better? I understand Ultegra is top of the line and Apex in entry level. Thanks
